Cheddar Fritters recipe

Cheddar Fritters ingredients list:

½ cup yellow cornmeal
½ cup all-purpose flour
¼ cup sugar
½ teaspoon baking powder
¼ teaspoon sea salt
1/3 cup milk
1 large egg
1 cup shredded sharp Cheddar cheese
1 cup canned black beans, drained, coarsely chopped
2 egg whites
Vegetable oil, for frying
Sour cream, salsa, and fresh corn, for serving

Instructions for Cheddar Fritters:

1) Whisk cornmeal, flour, sugar, baking powder, and salt together in a medium bowl. In a separate medium bowl, whisk together milk and egg. Add to flour mixture; stir to mix. Stir in cheese and beans.

2) Beat egg whites in a large bowl until soft peaks form; fold into flour mixture.

3) Fill a large iron skillet 1/8-inch deep with oil; heat over medium-high. Add flour batter by the tablespoon onto skillet; cook until golden brown on each side, about 2 minutes total. Remove and drain on paper towels while cooking the rest. Serve warm with desired toppings.
